Nutty Antioxidant Blueberry Pancakes
Pancakes... how they are oh so good. I love taking one of the most comforting dishes my Mama used to make and transforming them into something seriously delicious, nutritious, filling and healing for my grown-up taste buds.
Here, I’m sharing a super simple version with a Macro-fied twist for an antioxidant rich, anti-aging, free-radical fighting, protein filling, energetically dense stack of pancakes to be enjoyed morning, noon and night.

(Serves 1)
INGREDIENTS
1 medium banana
2 large eggs
4 tablespoons peanut flour
TOPPINGS
Greek Yogurt, Hemp Seeds, Banana Slices, Blueberries, Raspberries, Nut Butters, Cacao Nibs, Shredded Coconut, Maple Syrup
DIRECTIONS
Start by preparing your batter by mashing your banana until it’s smooth and fold in your eggs.
Add the peanut flour and stir until the batter is smooth.
Heat a skillet over medium heat and spray with coconut oil/avocado cooking spray.
When the oil is fragrant, use ¼ cup measuring cup to scoop the pancake batter into the skillet (the batter will be a little thinner than normal pancake batter.)
Let cook for approximately one minute or until the top of the pancake begins to bubble and carefully flip your pancake. Let the second side cook for an additional minute. Remove and place onto plate.
Repeat until batter is gone.
Enjoy with your favorite toppings!
