Activated Charcoal Pancakes

These pancakes are as striking in person as they are in the photo and super fun to make. Just make sure you are wearing dark clothing while mixing them up.

(Serves 2) 

INGREDIENTS

  • 1 cup organic flour

  • 1 tsp cinnamon

  • ½ tsp freshly grated bourbon vanilla

  • 1 tsp baking powder

  • 1 tsp of maple syrup for pancake batter

  • 1 tbsp of maple syrup for “blue spread”

  • 2 tsp food grade activated charcoal

  • 1 tbsp melted coconut oil

  • 1 cup water

  • 3 tbsp blackberry compote (mashed blackberries)

  • Handful of fresh blackberries for serving

  • 1-2 tbsp maple syrup for serving

  • 3 fresh springs of mint for serving

  • ½ cup of coconut yogurt

  • 1 tbsp food grade blue majik (spirulina)

 DIRECTIONS

 1.    Pre-heat a non-stick frying pan with a little coconut oil. Pan should be hot before you add the pancakes. 

2.    Add the flour, baking powder, cinnamon, vanilla, maple syrup (1 tsp) and water to a mixer and blend until a thick batter forms and keep to the side. 

3.    To make the “blue spread”; add the coconut yogurt, maple syrup (1 tbsp,) and blue majik and blend. 

4.    Spoon the pancake batter with a ¼ cup at a time into the pan and cook for 2-3 minutes until the underside is firm, flip and cook (1-2 minutes) the other side. 

5.    Top the pancakes with the blue spread, blackberry compote, fresh blackberries, mint and serve.
