Single-Serve Chocolate Chip Protein Cookie

This soft protein cookie is a game changer and beats any bakery! It is by far the best protein cookie you will ever taste! You can always choose to indulge while staying healthy or focused on whatever your health goals are.

Even while in a deficit this past month, I’ve made the recipe a few times, and I no longer buy desserts at the grocery store.

Remember you can always get strong and feel good doing it!

This single serving protein cookie recipe is packed with over 20 grams of protein!


(Serves 1)

INGREDIENTS

  • 2 tablespoons (16 grams) protein powder (whey or casein)

  • 2 tablespoons (30 grams) natural almond butter

  • 1 tablespoon water

  • 1 tablespoon (12 grams) dark chocolate chips

  • 1/4 tsp pure vanilla extract

  • 1/16 tsp each: baking soda and salt

  • 1 1/2 tablespoon maple syrup (optional)

DIRECTIONS

  1. Preheat the oven to 350 F.

  2. Mix the protein powder, baking soda, salt, and chocolate chips together in a bowl.

  3. Mix in the almond butter, vanilla extract, water, and optional maple syrup to form the protein cookie dough.

  4. Form into a large ball with your hands, place on cookie sheet/baking tray and press down.

  5. This cookie will not spread in the oven. If you want a flatter cookie, press the ball into a cookie shape further with your hands or a fork.

  6. Place the tray in the oven and bake for seven minutes.

  7. After you remove from the oven allow the cookie to cool for an additional five minutes so it firms up further.

  8. Sprinkle with cinnamon or sea salt flakes and enjoy!

TIPS & NOTES

I personally use casein micellar protein powder to make these and omit the maple syrup. I find the natural sweetness from the casein pairs perfectly with the almond butter and dark chocolate to deliver an amazing cookie that is sweet enough for me.
